This Sunday stars will be eating filet mignon, char, Waldorf salad, lemon cheesecake and washing it down with Moet cocktails. The Golden Globe menu was unveiled Monday morning at The Beverly Hilton.
“There is probably about 6,500 people in the whole event. The Golden Globes itself has 1300,” said Executive Chef Troy N. Thompson.
Chef Thompson will have 40 chefs, 50 bartenders and 250 servers working to deliver entrees, drinks and hors d’ oeuvres.
Inspired by California’s abundance of fresh produce, guests will enjoy a three course meal with a choice between meat and vegetarian.
“The entrée dish is a dual of Arctic char, slow roasted Arctic char and then onion marinated fillet, tenderloin. It gets a little red wine sauce and then tomato compote, heirloom tomato compote then we have a potato croquette in the middle and a kale chip. You have to be healthy there,” described Chef Troy N. Thompson.
Aside from vegan or gluten-free requests, guests may prefer double meat, or fish only.
“The vegetarian entrée is ricotta cannoli and inside of it it’s got ricotta and basil, handmade pasta and then we just warm it up with a little Parmesan cheese on top, a little tomato sauce on top of that and fresh thinly sliced California vegetables,” continued Chef Thompson.
For dessert: a trio of cassis lemon cheesecake, chocolate alliance salted caramel and hazelnut dacquoise. In a town where celebrities often time count calories, Executive Pastry Chef Henzi reveals people actually finish their desserts.
“You know they actually do try the desert to my liking, I’m surprised which I like that they enjoy the desserts,” said Executive Pastry Chef Thomas Henzi. “They do try them because the calories don’t show up until Monday so they are looking great when they come to the event and plus it’s a party. They are here to have fun.”
On the table: bouquets of red, yellow and green roses mixed in with lavender orchids.
“Golden Globes flowers this year, a departure. Usually it’s a little more serious, a little more sedate. This year it’s kind of crazy,” said Mark Held form Mark’s Garden. “We are doing something that I think is fun, very colorful right, very bright, a little unexpected because that’s what these awards are all about. You never know what’s going to happen that night and we try to portray that feeling in the flowers.”
The 72nd Annual Golden Globe Awards are Sunday 11 January at the Beverly Hilton hotel in Beverly Hills, California.
