Nutritious Ivatan meals

SWEET potatoes have antioxidant and anti-inflammatory properties.

The orange-fleshed potato is one of nature’s best sources of beta-Carotene and vitamin A. It has antioxidant and anti-inflammatory properties.

Healthy steaming of potatoes for seven minutes helps maximize their nutritional value and brings out their great flavor. In my Batanes Photo Safari, this is our usual merienda after a tiring trek.

Flying fish

Wrapped in bread leaves, we eat them with fried flying fish served with chopped tomatoes, sibuyas Tagalog and ginger.
